I like zucchini sautéed with garlic or battered and fried, and I used to grow or every year in my garden back on the Massachusetts homestead. Squash, on the other hand, has to be fried just right and never mushy. Mushy squash goes in the trash and not in my mouth.
This casserole has tons of cheesy flavor that is really good but He mushy squash texture totally ruins it for E flavor is so good that I forced my self to ignore the mushy squash for about 5 bites more than plain mushy squash would ever get. So if you love squash and don’t have the texture issues that I have you may love this one.
