Okay, it isn’t autumn but today was a good day for another soup for dinner. Mark gives it a 4.4 and the only reason I didn’t go higher myself is that I have another recipe that is a little better than this one.
*** Update – was able to find the pepitas on the way home tonight so toasted them and warmed up the soup. It is a LOT better with the crunch and flavor added by these tasty little nuggets.
One complaint: if someone has never made this soup before telling them to use as much of some ingredient as they like may be frustrating to them. She does provide a min/max range but it is broad enough to be significantly different if you go with either extreme. I went with the mid of the range and it could have used more.
