Mmmmmmm. Wonderful start to a cold, cold morning. Delicious and an interesting flavor combination. The peppers are cut a bit bigger than usual for a dice, but it works because they end up soft enough that you don’t get too much in a bite if you don’t want to. Thyme is what makes this stand out.

Oh, and this is my first frittata! Not hard to make but detecting the right time to move it from stove top to oven to broil finish was a bit stressful.

I have to say, I have been able to find the majority of the ingredients in the book at the Walmart Superstore near us and only occasionally have to seek out items at the supermarket. The use of readily available (and reasonably priced) ingredients is one of the many things I love about this book.
