Uses Graham Cracker Crust
This is really good tasting but the consistency is not a pie so much as a pudding. And it isn’t just me and my preparation. Take a look at the picture in the book! I saw that and thought, “wow, were they short of time and had to go with a bad pic?” Nope. That’s just how it sets up.
I’m going to do this again but as a pudding and I think it will work much better. Just spoon into individual cups and crumble the graham cracker crust on top. Viola!
I included a picture of one of the best purchases I have made in terms of kitchen gadgets. The adjustable measuring cup is unbeatable for sticky stuff like syrup, condensed milk, molasses, shortening … just about anything that’s hard to get out of the standard measuring cup. It is marked with cups, ounces, liters, and tablespoons for easily getting the perfect measurement and it goes up to 2 cups. Once filled just tip into the bowl and push the bottom as a plunger to sweep out all the goodness inside. Scrape the bottom with the flat side of a rubber spatula when it hits the top rim and you are done! So much easier than scraping out an old fashioned measuring cup.
