Soup in July, I hear you ask. Yes. It was a rainy day today so soup was on the menu. And this is a tasty soup for a weeknight as it only takes about 30 minutes if you take it seriously. Well, that and it tastes fabulous!
This would likely get a higher score but the recipe is a little vague. It calls for tortellini but doesn’t specify whether you need fresh, frozen, or dried. All 3 are available, with frozen and dried being the easiest to store and have on hand. Based on the cook time I think it expects you to use fresh, which I don’t have on hand, but I do have frozen and it works just as well if you cook it an extra minute or two.
The flavor is really, really good and she gives you options on the spinach if it’s not your thing. I used regular spinach but in retrospect, I would use baby spinach next time simply because it doesn’t have the thick spine that messes with the texture. Otherwise, it’s almost perfect.
I also note that this is the first recipe using fire roasted tomatoes that I think works really well.
