Its hard to screw up sweet potato casserole but this comes pretty close. I love everything about it but the cornflakes. Apparently, Tony the Tiger has an aversion to sweet potatoes, because the corn flakes in the topping pretty much ruin the effect. They are hard and sticky at the same time and totally sabotage the dish.
If you are going to make this, consider leaving the corn flakes out.
I included the second picture of the beaters because they are just pretty cool after whipping up the potatoes.
