We have this every St Patrick’s Day and watch “The Quiet Man” on DVD. John Wayne, Maureen O’Hara, shepherds’ pie … doesn’t get much better than that.
This is a bit spicier than what I make and doesn’t have that gooey cheese on top, BUT, it has a lot of good flavor and the fresh veggies bring an extra level of fresh taste to the dish. I usually opt for frozen veggies (time constraints) and prefer a more gravy-like binder for the meat filling instead of the tomato based one here. Her recipe also uses a LOT more pans, but if you are only making it once a year like I do then go for the extra fresh extra steps and pans.
