I have mentioned before that I am not a big salad fan, but this is a really hearty, tasty salad. I used chicken instead of salmon, which the recipe allows – in fact, encourages. She points to the many options you have to put your own mark on this dish. I also omitted the capers, which I do not like.
I noticed after I took the first picture that I had several ingredients that don’t belong in this recipe. I had pulled the stuff to make the salmon tonight, realized I didn’t have lemons, and put almost all away but left a couple. So the many spices you see are not used. It was one of those nights.
Now, that’s not to say that the dressing is bland. It’s really good. The Dijon mustard I used has Chardonnay in it which may have something to do with the excellent taste.
