This is the best roast chicken (not cooked in a clay pot) that I have ever made. It is tasty and very moist. Mark loved it.
Couple of things – First, the roast garlic (the little charcoal briquettes in the last picture) were not edible. You are supposed to squeeze them onto the chicken but I was doing 4 recipes tonight and mixed up and put CLOVES instead of HEADS in the pan. Nailed it!
Second, this recipe should have a PG13 rating. You have to massage the breasts to distribute the seasonings and it is almost obscene after you pack the cavity.
