Lebanese Salad – 4 stars
The fatayar is good but dry and needs some kind of sauce. This is one you can change up the filling to suit your family’s particular favorite flavor combos if you so desire.
Mark Wilson graded the salad because I don’t like cucumbers so I can’t give it a fair rating. I will say that dicing up the English cucumbers is easier than regular ones. The seed center is firm so slicing is a breeze.
I love that she shares her family’s traditions and stories with the recipes. This one is her grandfather’s signature dish with some 21st century conveniences included. She makes this for her dad every year for his birthday and it is her way of honoring that part of her family. I get that. Whenever I can jelly or tomatoes, I feel a connection to my mom as if she was still just a phone call away. Whenever I make 24 hour salad I smile because it reminds me of all those Sunday pot lucks at the North Little Rock Church of Christ growing up. Just typing this makes me shed happy tears for the memories this has brought back, and the traditions they passed on to me is at the heart of that.
