Mark gives this a 3.8, so consider my score as being a bit tainted by personal bias. I hate runny eggs yolks. I also hate black beans, so I left them out which keeps it from being under 2 for me.
The runny yolks aside, this still doesn’t get a good score for overall taste. The rancheros sauce just has a weird taste to it for breakfast. The onions, tomatoes, jalapeños, and tomatoes are cooked in butter until mushy and then emulsified into chunky tomato sauce consistency, so it’s sweet from the butter and onion but then you have the jalapeño added in so it just doesn’t work for me.
My emulsifier is cursed. I ended up having to put this into my magic bullet and pulse a few times to get the onions to stop looking like pale worms in the sauce. Not sure why she doesn’t have you dice the onions instead of slicing but either way they have to cook until soft before you get the consistency to chunky tomato sauce.
Final thought – best way to eat these is as a breakfast taco.
