Mmmmmm. If you like sweet and sour chicken you will love this dish. I messed up and did not get chicken thighs, which would be excellent and cheaper, but breast meat works as well. It is a sheet pan meal, which keeps the dirty dish count down, and since you basically use 1 bowl to mix the sauce and 1 to toss it all together at the end the sink still has plenty of room in it.
Just to put this out there, I think mine looks way better than the picture in the book. 👀
The chicken ends up with a beautiful glaze, and bright pineapple and red pepper strips are not only pretty to look at but a perfect taste combination with the sweet and tangy sauce.
This is another “keeper”! Try it if you have the book.
