French onion dip is one of my favorites. Give me a tub of it and a bag of Ruffles with ridges and I can polish off both, so I was excited to see this recipe. It did not disappoint where flavor is concerned but the recipe itself is frustrating.
As stated above, I love French Onion dip, but even I can’t eat 8 CUPS of it! Seriously? I have never been to a party where everyone there could polish off 8 CUPS of onion dip In one night! So you reduce the recipe and cut it in half. We still can’t eat 4 CUPS of onion dip! So you have to cut it in half again. That’s a lot of math to get a reasonable amount of dip. But, of course, the proportions don’t allow you to just divide by 4 and actually have a measuring cup or spoon of that size. Ugh!
But frustrations with needing advanced mathematics to make it, the dip is delicious. We had chili for dinner last night and I put a dollop on top instead of sour cream and it was really good. I predict it will not last long and since I only made 2 cups that’s a reasonable amount to eat over a few days.
8 cups! WOW!! A friend of mine made this recipe for a wedding shower I attended recently. It was delicious and the good news was, we all got to take some home. Ha ha ha.
