We had a pretty wide range of opinions on this one. Mark gave it the lowest review and Andrew gave it the highest, mostly due to the addition of cheese and spiced croutons (which are not called for in the recipe so his vote can’t actually count).
I give it a 3 because it has potential, the flavor isn’t bad, but I am not sure what it needs beyond some additional body – it was pretty thin. Perhaps decreasing the amount of broth would help. We live in a REALLY humid environment so you don’t get as much evaporation from simmering as they do in a dryer climate like Texas. The tortillas helped add some body and flavor. This is one time when MORE salt was needed instead of less. But I can’t taste this and say, “it just needs (fill in the blank)”. Maybe sour cream? A spoon full of pico de gallo on top? Something is missing I just can’t figure out what.
