Okay, so I have been really afraid to try this. You hear so many horror stories about fallen soufflés. So getting not 1 but 8 of them out of the oven, in all their risen glory, is a major accomplishment!
These are not too sweet and are a creamy, dreamy chocolate experience. I say “experience” because as you put this on your tongue you close your eyes and revel in all the delicious sensations of taste and texture. One of these is a filling dessert, so of course I had 2.
Lesson learned on this, 1 minute too long in the oven and the tops crack and dry a little, so take them out a minute before you think they are ready.
