The corn “relish” (that’s my term, not hers) is really good and has a unique flavor that pairs well with the chicken. The sweetness of the corn, blend of spices, and cojito cheese is kicked up a notch by the pickled red onions and it all comes together with the chicken for a great dinner, even on a week night. Make the pickled onions ahead of time and this is a 45 minute meal with the majority of it cooking time on the chicken which leaves you plenty of time to make a side dish.
The steak and chicken tacos are both much better than then pulled pork and both are flavored to be a good match with the Cilantro Lime Rice. Add a margarita and you have a complete meal.
