I LOVE this version of the classic chicken parm! I was skeptical of using cracker crumbs and NOT using mozzarella, but it really works. About the only thing keeping it from being a solid 5 is the texture of the cheese topping. It’s really good, but just a tiny bit on the grainy side. And that is the only thing that could be improved in my humble opinion.
Fair warning ⚠️: this makes a HUGE entree. Even Andrew only managed to finish half a breast.
The garlic knots don’t get a review because I misread the recipe (used too much oil) and they came out a bit chewy. But they smell DIVINE!
