I have made my own chewy granola bars for years, and one thing I insist on in the final product is that a kid can eat it in the back seat of a moving vehicle without having to go to the car wash for a vacuum afterwards. These do not pass that test.
The recipe calls for mini chips as the topper. They look so cute! But they are evil. No matter how hard you mash the mini chips into the surface they are not going to stay there. As soon as you pick up a piece the chips start falling off and bouncing everywhere. Opt instead for melting them and then spreading them over he top.
A comment on the flavor: the chocolate/cherry combo doesn’t work for me. I halved the oat mixture and used dried cranberries and whites chocolate instead and it was much, much better. In that respect, it is a good basic granola bar, you just need to experiment with your own flavor combinations until you find the one that works for you.
