Time for another recipe that combines my favorite flavors – tomato, basil, garlic, and cheese. Given a choice between basil and dill I will always choose basil but you have the option if you like dill flavor. And when I can combine the basil with tomatoes and garlic it’s like hitting the trifecta of awesome flavors.
For these cheese balls, I opted for coating in walnuts and toasted sesame seeds. The sesame seed one edges out the walnuts for overall flavor, in my humble opinion, but both were excellent. I was not brave enough to try rolling a cheese ball in black pepper. That scared me. The final coating option was parsley and having done that one already on the Mini Cheese Balls I stuck with making just 2 balls.
The size of these guys is perfect for a party. I shared one with a neighbor since it’s just the 2 of us to keep from having to either eat ALL of that cheese or throw it out, which would be a terrible waste of good food.
Note : to make the rolling less messy and end up with a better shaped ball I put the filling in the refrigerator to set up before coating.
