This one has potential but just misses the mark. The sherry vinegar brings in a little tang but it needs more. The cranberries bring in a little tartness but it needs more. In short, it just needs more of everything except cauliflower.

I waited to post on this one so I could try it the next day as a topping on salad. Let’s just say that serving it cold only intensifies the blandness making it need even more of the flavorful ingredients.

The underlying issue is the cauliflower’s bland yet slightly funky flavor. It needs to be jazzed and jazzed seriously not slightly. Up the garlic, increase the vinegar, more onions … all are good options to boost this one up from “mediocre” to “pretty good”.
