The streusel topping is what pushes this one above the bar for a really good tasting muffin in my book. Lots of blueberry flavor and I could see adding a touch of lemon extract to kick it up another notch.
However … they do NOT come out of the pan easily even when using a nonstick pan WITH cooking spray, which is mostly due to their very loose density. So use the paper liners when making this one and eat them on a plate! I say “them” because eating just one is not an option.
And eat them warm. The streusel topping gets a bit toffee-like when cool.
