This is one of those dishes that looks incredible and impressive, but in the end it is a bit of a disappointment if you are the cook. It looks so intimidating to make! And it is maintenance! You need to assemble it right before you serve it, and it doesn’t store well so you need enough people to finish it at the time you serve it. When you present it you get ooooh’s and aaaah’s from your guests, which is very satisfying to hear after all the work that went into assembling it. But when you finally get your bite it is a bit of a let down. After all that work you think, “wow, I could have just made a sheet cake and dumped cherries on it and spread whipped cream on top and it would transport easier and store better and still taste the same.
That said, it really is an impressive cake and one everyone should make at least once just so you can say you have. And it is tasty. But once you’ve made the original go for the sheet cake approach and save yourself the extra effort.
