The texture of the skin of the baked egg is odd if you leave it in the oven even 5 seconds too long. The flavor, however, is really, really good. I made a half recipe since you need to eat right away and there are only 2 of us up this early. The Boursin I used is the garlic and herb version and it brings a wonderfully creamy consistency to this dish.
