Problems with this recipe:
1- Way too much leek. It needs a cup measurement because my 3 large leeks were just too, too much.
2- Leeks have to be thoroughly rinsed to get the dirt out of the crevices, and the recipe doesn’t tell you that. I rinsed them and let them drain to get the excess water out and probably should have sautéed them for a few minutes to further reduce the moisture. These are things the recipe should have addressed.
3- This took FOREVER to cook through and set up (see #2 above). I had to cook it about twice as long as the recipe calls for.
4- It needs more egg to hold together better. When finally done and cut it was a sloppy, mushy, messy, unappetizing texture.
Now, the flavor is pretty good, and with a few alterations this COULD be a really good quiche, but the recipe as-is … isn’t.
