Avocado Grapefruit Salad – 4 stars

I don’t eat a lot of salad for the simple reason that lettuce has almost no flavor. To make it fun to eat you have to add a ton of stuff to it and usually add a calorie-laden dressing from a bottle. Not so with this one. Lots of fresh flavors that are light and tangy.

Two challenges on this one. First of all, grapefruits are a mess to section. I finally had to do an internet search on the quickest way to do it. Thank you YouTube! Her instructions to use a knife to “release the sections from the membranes” sounded so simple … and empowering! Like one quick flick of the wrist and the sections will fall into the bowl with a cry of “freeeeeeeeedommmmmmm!” No. That’s not how it works. I had to carve them out of the peel and then pick the membranes away and separate the sections and pick away membranes and carve out more…

Challenge 2 was the avocados were not quite ripe enough. I had to fall back to the leftover avocados from last night. I had used some lime juice on them before storing so they were still in really good condition.
