If you are a fan of Gilligan’s Island you will remember that Mary Anne’s coconut cream pie could get Gillian to do just about anything. Well, if she was using this recipe I can see why – it is out of this world good. And it isn’t that hard to make.
I am not a huge fan of meringue on pie. My mom used to put it on pies and I would always scrape it off – I hated the texture and taste. I still do. But for the sake of the challenge I made myself try it and I was pleasantly surprised. The topping is sweet and has a creamier texture that is much more palatable.
Option on this one: Omit the crust and meringue and it is a fantastic pudding!
